Serves 4 (but easily multiplies)
2 large vine ripe tomatoes, sliced 1/4" thick (I recommend not using the very top or bottom. You should get 4 slices from each tomato)
2 tbsp Parmesan cheese, shaved thin
1/2 tbsp olive oil
1/2 tsp dried basil
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp onion powder
Preheat oven to 375 and line a baking sheet with aluminum foil.
Place tomato slices on sheet roughly 1/2" apart.
Season with salt, pepper, and onion powder.
Top each slice with 1/2 tbsp Parmesan.
Sprinkle over basil and drizzle over olive oil.
Bake in oven 10 minutes or until cheese turns golden on the edges.
Remove from oven and let cool 1 minutes before serving, cheers!
