English Chicken and Mushroom Pub Pie

Pies are a staple menu dish in pubs across England. My favorite style pie is covered with a flaky pastry top and savory herbed filling.

Full time 1 hour
Serves 4-8

The needs-

1 can croissant rolls
1 lb. boneless skinless chicken breast, cut into 1/2" pieces
1 pint sliced mushrooms
1 cup milk
2 tbsp olive oil
2 tbsp butter
2 tbsp minced onion
2 tbsp fresh thyme
2 tbsp flour
1 tbsp dijon mustard
2 tsp salt
1 tsp ground black pepper

The know-

Preheat oven to 350' and lightly grease a round baking dish.

In a skillet heat olive oil and chicken, stirring gently until chicken is lightly browned on each side.

Add in mushrooms, cooking 8-10 minutes or until mushrooms are tender.

Add in butter, minced onion, thyme, Dijon, salt, and pepper.

Add in flour and stir 3-4 minutes.

Add in milk and lower heat to medium low, cooking 5 minutes until sauce has thickened.

Pour mixture into prepared baking dish.

Stretch croissant dough. over top of pie, starting on the rim of baking dish with widest side of croissant dough.  

Tips will overlap a bit and there will be a few grabs between dough for venting.

Bake in oven 18-20 minutes or until croissants are golden.

Let rest 10 before serving.

Spice Rubbed Grilled Pork Chops

Easy and full of extra bold flavored, these pork chops are the perfect weeknight diner.

Full time 1 1/2 hours
Served 3-6

The needs-

6 boneless 1/2" pork chops
3 tbsp paprika 
1 tbsp sugar
1 tbsp ground white pepper, if desired black
1 tsp chili powder 
1 tsp garlic powder 
1 tsp onion powder
1/2 tsp cayenne pepper 

The know-

In a ziplock bag place all spices.

Shake to fully blend.

Add in pork chops.

Shake to fully coat.

Rest in refrigerator for 60 minutes.

Grill over medium-high heat for 8-10 minutes per side. Or until pork chops reach your desired doneness.

HOW TO: Make Loaded Nacho

Here is a easy, fun, and fantastic recipe to enjoy restaurant quality nachos right ate home.

Full time 20 minutes
Serves 2-4

The needs-
1 lb ground beef
1 jar resturant style salsa (I use black bean and corn)
1 tbsp olive oil

For Finishing-
Shredded Cheese Blend or Cheddar
Sour Cream
Guacamole (optional)

The know-

Heat olive oil over medium high heat.

Add ground beef into pan and brown 5-8 minutes stirring occasionally.

Add in salsa.

Lower heat to medium low and cook 5-8 minutes or until most of the liquid cooks off.

Pile nachos on a serving platter and top with ground beef mixture.

Top with cheese, sour cream, guacamole, Ext.

Cinnamon Roll Apple Pie (Two ingredient Apple Pie)

Quick and easy, this pie can be made in under an hour with only two ingredients! Perfect for a last minute dessert or a pot luck party.

Full time 1 hour 
Makes 9" pie

The needs-

2 cans cinnamon rolls (8 rolls per can)
1 lg or 2 sm (28 oz total) apple pie filling

The know-

Preheat oven to 350' and spray a 9" pie pan with cooking spray or lightly butter it.

Working with one can of rolls first, set icing aside. Place rolls on non stick surface and gently roll flat roughly 1/4" with a rolling pin(or glass). 

Place five rolls in the bottom of pan.

Cut remaining three in half and begin to gently press them to the sides of pan.

Make sure you allow rolls to slightly overlap layer on bottom of pan and pinch or press them together.

You will need to use four rolls from the second can to finish the side of pan. Set remaining four and icing aside.

I usually end up with a half of a roll leftover. Use it to fill in any gaps by breaking off small pieces.

Bake in oven for 12 minutes.

Carefully remove from oven, it will have puffed up.

Use the back side of a spoon to smooth air out of rolls.

Return to oven and bake 3-4 minutes or until golden in color.

Carefully remove from oven and fill with pie filling.

Roll out remaining four rolls, unrolling them. Cut dough strips in half.

Place four strips across top of pie evenly spaced.

Rotating dish 90', place four strips across top creating a crisscrossing pattern.

Bake in oven 15 minutes.

Remove from the oven and let cool fifteen minutes. Drizzle icing over top of pie and let cool an additional ten minutes before serving.

BAKE IT: Dinner rolls

Okay, who doesn't love bread with dinner? I could probably live off of bread, it always brings a smile to my taste buds. Bread is a great addition to any meal with a gravy or sauce that may need to be scooped up from the plate. It also is a great accompaniment to soup. 

I usually bake bread once a week, but only recently did I start making dinner rolls. They bake up nice and fluffy, have a great golden outside with a warm soft inside, and go from ingredients to table in under 2 hours! 

This will make 12 rolls
Full time: 2 hours

The needs-

1 egg
2 1/2 cup flour
1/4 cup butter, melted
1/4 cup granulated sugar
6 tbsp milk
6 tbsp water
2 1/4 tsp active dry yeast, or 1 package
1/2 tsp salt

For baking: 2 tbsp butter, melted

The know-

In a sauce pan over medium heat combine, water, milk, sugar, salt and bring to 115 degrees, remove from heat

Pour yeast over top and let sit for 10 minutes

Add in eggs and whisk to full incorporate

In a large mixing bowl place flour, make a divot in the middle of the flour 

Slowly pour in sauce pan mixture, DO NOT MIX, cover with cling film and let sit for 30 minutes

Add in melted butter and mix well, if the mixture feels sticky add in small amounts of flour. Knead lightly 5 times and recover for 30 minutes

While this rises, lightly grease and flour a baking sheet

Shape dough into 12 even balls and place on baking sheet
Cover with tea towel and rise for 30 minutes

Preheat oven to 400

Bake rolls for 10 minutes

Rotate tray 180, brush rolls with baking melted butter and bake an additional 5-10 minutes until done
Remove from oven and let set 5 minutes before serving.
