CAMP OUT: Dutch Oven Blueberry Flan


Similar to a French Clafoutis, this flan is great for camping. Made with fresh blueberries, this can easily be topped with apples, bananas, or any berries of your choice.

Full time camp fire 2-4 hours depending on fire temp
(Can be cooked in home oven 350' for 1 1/2 hour)
Serves 4-8

The needs-

5 eggs
1 can (12oz) evaporated milk
1 cup blueberries
3/4 cup flour
1/2 cup sugar
1 tsp vanilla
1/2 tsp salt

The know-

In a mixing bowl whisk together eggs, sugar, and salt, whisking vigorously for 2-3 minutes to create a pale yellow airy mixture.

Whisk in flour.

Whisk in condensed milk and vanilla.

Lightly grease your dutch oven with butter (or cooking spray) and gently pour in batter.

Add in blueberries.

Cook on edge of fire, rotating dutch oven half way through cooking. If fire is burning hot (roughly 350-400) this will cook in approximately 1 hour. Test by gently pressing finger in center, it should feel firm yet spongy to the touch.

In a low fire or of you want to use adjacent heat so it does not burn, this will cook in about 3 hours (similar to cooking in a slow cooker).

Allow to cool, with lid on for 30 minutes before serving, cheers!
