I love roasting chicken, they are perfect for family gatherings and Sunday suppers. Here is one of my favorite easy ways to create a flavorful roasted chicken.
Full time 2 1/2 hours
6 lb. roasting chicken
1 large onion, skinned
1 bunch basil leaves
1 lemon, cut in half
1/4 cup butter, sliced into 8 pieces
2 tsp salt
1 tsp ground black pepper
Preheat oven to 400'
Place chicken in baking dish. And gently loosen the skin with fingers.
Slide butter pieces under skin.
Stuff a few basil leaves and onion into chicken.
Squeezing lemons carefully, juice them half way and tuck alongside chicken.
Season with salt and pepper.
Stuff remaining basil under skin.
Roast in oven for 15 minutes, then lower oven temp to 350'. Roast for 1 1/2-2 hours or until pop timer pops.
Allow to rest 5-10 minutes before slicing.
