MUG IT: Mexican Egg Chilaquiles
I know most mug recipes are for desserts and cakes, but long before the baking in a mug trend came about single serve microwave dishes existed. From dorm life to cooking on the go, single serve microwave meals are the way to go. Here is a great afternoon or evening snack with a yummy Mexican flare!
Full time 5 minutes
6-7 tortilla chips
1 egg, beaten
3 tbsp shredded cheese blend
1 tbsp milk
1 tbsp salsa
1/4 tsp salt
1/4 tsp ground black pepper
Okay I need to start by saying, yes originally this recipe was created to go in a mug, but I actually make it in an individual ramekin-it is easier to eat that way.
In your mug/ramekin combine egg, milk, salt, pepper, and half of the cheese.
Break tortillas into large pieces and add into mug/ramekin.
Add in salsa.
Microwave for 1 minute.
Top with remaining cheese and microwave for 30 seconds or until egg appears fully cooked.
Let rest 1 minute before eating, top with sour cream if desired.
