Tofu is one of the best unsung proteins there are. Sometimes it is hard to work with and can be a tad tricky to handle. Here is my trick to easily cutting tofu. it is all about the moisture content.
I start by drying the outside of the tofu. To do this by placing the tofu between paper towels and gently press. Run your hand across the top to ensure all excess moisture is removed.
Remove paper towels and carefully use a sharp knife to cut lengthwise 1/2" strips.
Turn 90' and cut widthwise 1/2" strips. Your tofu is now ready for what ever recipe you have in mind.
