Chipotle Crispy Potato and Mushroom Saute

Quick and easy, this tasty side dish will add a nice amount of heat to any meal.

Full time 30 minutes
Serves 4

The needs-

2 medium/large potatoes, diced into 1/4" pieces
1 quart mushroom slices
1/4 cup butter
2 tsp dried cilantro
1 1/2 tsp ground chipotle pepper
1 tsp ground black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
*add salt only if needed

For cooking:
1 cup vegetable oil

The know-

In a deep saute pan, heat oil over medium high heat until it just begins to bubble. Carefully add in potatoes and cook 8-10 minutes, stirring occasionally to crisp up potatoes and get a nice golden color on sides.


Drain oil.

Add in butter.

While butter melts. Toss mushrooms with remaining ingredients.


Add mushrooms into pan with potatoes and stir to combine.

Lower heat and let mushrrom cook down for 5-8 minutes or until golden in color.


Move to serving bowl. Cheers!
