TABLE FOR TWO: Second Breakfast Sausage Hash

As an ode to the Tolkien series, my other half asked if I could create a dish for second breakfast. After some consideration, I decided the bast way to go was a hash made with eggs, sausage, and of course potatoes.

Full time 30 minutes
Serves 2-4

The needs-

1 lb. apple sausage or jumbo breakfast sausage, sliced
4 eggs
2 medium white potatoes, diced into cubes
1 small purple potato, diced into cubes
1 small red potato, diced into cubes
1 large red onion, sliced
2 tbsp fresh dill
1 tbsp olive oil
1 tsp salt (or to taste)
1 tsp ground white pepper (or black)

The know-

In a large saute pan, heat olive oil over medium high heat.

Add in onions and potatoes, allowing onions to cook down for 3-5 minutes to become soft and golden on the edges.

Season with salt and pepper, lowing heat to medium low and cook 10-12 minutes or until potatoes are easily pierced with a fork.

Add in sausage and half of the dill. Stirring or tossing to fully incorporate. Allow sausage to cook through and get a nice golden color.

Move to a serving platter.

Carefully crack and fry eggs in saute pan to your liking. If you cook 2-3 minutes per side you get a nice runny yolk which make this dish even better.

Carefully slide eggs onto hash.

Top with remaining dill and serve immediately. Cheers!
