The term pulled pork generally brings an image of BBQ to mind, however if your ever in a Mexican resturant you can find another equally as yummy pulled pork. Full of spices and often used as a burrito filling, this pulled pork is easy to create in your own kitchen with a few simple ingredients. I really enjoy making this recipe as it is a great set-it and forget-it dish.
Full time 6 1/2-7 1/2 hours
3-4 lb. pork roast, well trimmed
15 oz. can fire roasted tomatoes
2 cups salsa (I use homemade, but store bought is fine)
2 green or cubenella peppers, diced large
In a slow cooker pour fire roasted tomatoes and spread along bottom of pot.
Top with pork roast and place diced peppers around outside out roast.
Top with salsa.
Cover and let cook on low heat for 6-7 hours or until pork easily pulls apart with a fork.
Gently remove pork for pot and pull apart using two forks, return to pot.
Allow to sit in juices for at least 15 minutes before serving. Serve with rice or with tortilla/taco shells. Cheers!
