Okay when you hear the word pulled, you probably think pork. But let's be honest several dish and meals involved pulled meats other than pork. This is one of those dishes and when served over dirty rice it is a little bit of tropical heaven!
Full time 6 1/2-7 1/2 hours
4 celery stalks, diced large
1 medium red onion, diced large
1 15 oz. can pineapple chunks with juice not syrup
2 lb. Bonless skinless turkey breast, cut into 8 equal pieces
1/4 cup sweet chili sauce
3 tbsp white vinegar
3 tbsp chicken stock
1 tsp minced garlic
In a slow cooker place celery and red onions.
Add in turkey and try to arrange it so pieces are in a single layer if possible.
In a small bowl whisk together chili sauce, vinegar, juice from pineapple can, and stock.
Pour mixture into slow cooker.
Add in minced garlic and pineapple chunks.
Cover with lid and cook on low for 6-7 hours or until meat pulls apart easily with a fork.
Carefully move to serving platter and shred meat with two forks.
Top with pineapple pieces and drizzle with juices from slow cooker.
Serve immediately alongside rice.
