Shortbread Thumbprint Cookies
These super simple shortbread cookies and light and airy. Filled with your favorite jam , jelly, or chocolate spread for the perfect winter treat.
Full time 40 minutes (includes cooling time)
2 sticks butter, softened
1 1/2 cups all-purpose flour
1/2 cup confectionery sugar
1 tsp vanilla extract
1/3 cup jam or chocolate spread
Preheat your oven to 350' and line 2 baking trays with parchment.
In a mixing bowl combine butter and vanilla.
Add in flour and sugar, mixing just until smooth and even in texture.
Roll 1" balls out and lay 1 1/2" apart on baking sheets.
Gently press thumb into middle of each ball, creating a well.
Place 1/2 tsp (approximate) of filling into center of well.
Bake in oven for 12-14 minutes or until bottom have lightly browned, do not over bake these.
Remove from oven and let set on tray 2-3 minutes.
Remove to wire rack and allow to completely cool before serving.
