Mexican Cheese Salsa Chicken Skillet

This is probably one of the easiest recipes to make and I still get asked how I do it. This four main ingredient dish boasts full and robust flavors which leaves everyone asking for seconds!

Full time 1 1/2 hours
Serves 4

The needs-

1 whole chicken, cut into parts
1 large jar salsa, your choice
1 large red onion, diced large
1/2 cup shredded taco cheese blend or shredded cheddar
1/2 tsp olive oil
1 tsp salt
1 tsp pepper

*I use a counter top electric skillet to make this dish, sear of and cook all at 350' following directions below.

The know-

Preheat oven to 350'.

In an oven proof deep skillet heat olive oil and onions over medium-high heat.

Once oil begins to sizzle and pop-add in chicken and season with salt and pepper. Allow to cook for 5 minutes.

Pour over salsa and let cook 5 more minutes. (if using electric skillet cover) Move to oven and bake for 40-60 minutes or until largest pieces of chicken have reached 170' on cooking thermometer.

Carefully add cheese to top of chicken and cook and additional 10 minutes.

Remove from skillet to serving plate and spoon salsa with onions over top.
