Caribbean Spiced Potatoes
Here is a great accompanyment to any meal. Easy to make and full of bold flavors, this one will whisk your taste buds off to an island paradise.
Full time 1 hour
4-5 medium white potatoes, scrubbed and diced into 1/2" pieces
1 red onion, diced into 1/2" pieces
2 tbsp olive oil
1/2 tbsp garlic powder
2 tsp salt
1 tsp dried thyme
1/2 tsp sriracha
1/2 tsp black pepper
1/8 tsp cayenne pepper
1/8 tsp nutmeg
1/8 tsp cinnamon
Preheat your oven to 375' and lightly spray a baking dish with cooking spray.
In a small bowl combine olive oil, garlic powder, thyme, sriracha , cayenne, nutmeg, and cinnamon.
In a mixing bowl toss potatoes, onions, salt, and pepper together.
Pour olive oil mixture into the bowl. Toss to fully coat.
Pour coated potatoes and onions into baking dish.
Bake in oven 45-55 minutes or until potatoes are easily pierced with a fork.
