Slow Cooker Turkey Sofrita
Sofrita is a braised vegetable based sauce with is full of flavor and aromatics. It is the base of many Latin American dishes and can be found on several restaurant menus. This recipe is a spin on a version of a dish I discovered at our local family owned Spanish restaurant. Full of spice and flavor this one makes your taste bud stand up and sing!
Full time 6 1/2 hours
1 1/2- 2 lb. bone in turkey split breast (or 1 - 1 1/2 lb. boneless)
1 jar Goya sofrita sauce
4 oz. can diced jalapeno peppers, with their juice
4 oz. can green chili peppers, drained
4 oz. can slice black olives, drained
1 red onion, diced large
1 bunch cilantro, chopped
In your slow cooker combine onions, jalapenos and juice, green chilies, and olives.
Place turkey on top of vegetable mixture.
Pour in sofrita sauce.
Add in chopped cilantro, reserving a small amount for serving.
Cover and cook on medium for 6 hours.
Carefully roll turkey over and remove bones, they should pull off clean.
Then move turkey to a serving platter.
Slice into 1/2" thick slices.
Ladle over contents of crock pot.
Serve immediately along side remaining cilantro.
