Roasted Sugar Pumpkin with Brown Sugar
Pumpkins are the unsung hero of the vegetable world, used for pies mainly, the beauty of this squash is usually highly overlooked. One of my favorite recipes for pumpkin roasts the pumpkin in an oven along with a great selection of spices to allow create an almost caramelized flavor around the outside of the pumpkin.
Full time 45-60 minutes
2 lb sugar pumpkin, cubed into 1/2" pieces
1/4 cup butter, diced into 16 pieces
1/4-1/3 cup brown sugar
1 tsp salt
1/2 tsp ground white (or black) pepper.
1 tsp cinnamon
1/2 tsp all spice
1/2 tsp ground ginger
1/2 tsp ground nutmeg
Preheat oven to 350' and lightly grease just the bottom of a small baking dish.
Toss pumpkin with salt and pepper to evenly coat.
Add pumpkin to baking dish and spread out evenly.
Place butter cubes into dish, trying to space them out evenly.
Sprinkle over cinnamon, all spice, ginger, and nutmeg.
Sprinkle over brown sugar.
Bake in oven for 30 minutes.
Test pumpkin for softness, by piercing with fork, if it easily pierces your pumpkin is done cooking. If not continue to bake in oven and check in 10 minutes.
Once pumpkin is soft, turn your oven over to broil and broil 1-2 minutes to caramelize the top, it will turn a nice golden brown, but watch this carefully to avoid burning.
Carefully remove from oven and serve immediately.
