Apple Buttermilk Muffin
Here is a great cafe style muffin full of flavor and texture! This recipe can easily be adapted for any fruit you desire, just swap out the apples and you are ready to go!
Full time 1 1/2 hours (includes cooling time)
Make 6 cafe/jumbo muffins
1 large apple, cut into 1/4" pieces
2 cup flour
1 cup buttermilk
1/2 cup sugar
1/4 cup butter, melted
2 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp ground nutmeg
1/2 tsp all spice
1/2 tsp salt
2 tbsp brown sugar
1 tsp cinnamon
Line a jumbo muffin tin with paper liners and set aside, preheat oven to 375'.
In a large mixing bowl combine melted butter, baking powder, baking soda, vanilla, nutmeg, all spice, and salt.
Add in egg.
Add in buttermilk.
Add in flour, stirring only to incorporate, it will not be a smooth batter.
Fold in apple.
Spoon 1/3-1/2 cup mixture into each paper liner.
In a small bowl combine brown sugar and cinnamon until even in color.
Sprinkle evenly across the muffin tops.
Bake in oven for 20 minutes and then rotate muffin tin 180'.
Bake for 10 minutes and test for done-ness, if inserted toothpick comes out clean they are done. if not return to oven and bake in 5 minute increments until done, do not over-bake!
Remove from oven and let cool in pan 1-2 minutes.
Flip onto wire rack and cool 30 minutes before serving.
