Full time 30 minutes (includes resting time)
2 large cucumbers, slice thin (as thin as you can)
1/4 cup rice wine vinegar
1/4 cup soy sauce
2 tbsp sesame seeds
1 1/2 tbsp sugar
1 tsp salt
1 tsp sesame oil
Place cucumbers into a large mixing bowl.
Add vinegar, soy sauce, sugar, salt, and oil. Toss cucumbers to evenly distribute sugar and salt.
Add in sesame seeds and toss to evenly distribute.
Let rest at room temperature for 20 minutes before serving.
Toss cucumbers one last time and move to serving bowl.
