India Inspired Saffron Mashed Potatoes
Full of subtle Indian hints and rich velvety texture, these potatoes will make any dinner sing. A perfect parring with steak or lamb, these potatoes are just a luxurious as they sound and just as simple to make.
Full time 10 minutes (does not include potato preparation)
2 lbs. potatoes, boiled and mashed
1/2 cup milk
1/4 cup butter
1 tsp salt (or to taste)
1 tsp ground black pepper (or to taste)
1 tsp (6-7 threads) saffron, crushed and minced
1/2 tsp coriander
1/2 tsp paprika
1/2 tsp garlic powder
In a small sauce pot, heat milk and butter over medium high heat until butter melts.
Lower heat to medium-low, add in saffron and garlic powder. Stir often to prevent scorching.
Cook for 6-8 minutes or until the milk takes on a slight color change from the saffron.
Season potatoes with salt and pepper.
Add milk mixture, coriander, and paprika into the potatoes. Stirring well to fully incorporate all the flavors.
Move to serving bowl. Cheers!
