Steak tips are simple, easy, and flavorful, making them perfect for weeknights. Here is a tried and proven recipe I will never mess with because, you should never mess with perfection!
Full time: 25-30 minutes
You will need:
2 lbs. sirloin steak, well trimmed and cubed (or 2 lbs. sirloin tips)* see below photo for good sizing
1 pint sliced mushrooms
4 tbsp butter
1-2 tsp salt
1-2 tsp ground black pepper
Let us begin:
First things first, make sure your kitchen is vented. Put a fan on or open windows, but vent yourself.
Gather ingredients next to stove along with your serving platter because, this will happen rather fast once you get going.
In a large skillet melt 2 tbsp butter until it begins to sizzle.
Add in mushrooms and cook 5-8 minutes or until soft and tender.
Move to serving platter.
Place 1 tbsp butter into pan and melt until it begins to sizzle and brown. Not burn but brown along the edges.
Add in half of your meat, you will get some possible smokage and you should hear sizzling instantly. (If not, your pan was not hot enough.)
Leave them for 30 seconds to brown and caramelize, then turn to another side.
Continue this until all edges are evenly browned and meat have cooked very hot for 3-4 minutes.
Remove to serving platter.
Repeat with remaing butter and meat.
Once second batch is browned and cooked add contents of serving platter back into pan and toss combine.
Allow to cook on heat no more than 1-2 minutes while doing this.
Move to serving platter and pour any melted butter/dripping over top.
