Popovers are a signature steakhouse item. Here in New England several restaurants offer these fun airy treats in baskets with honey butter or marmalade. Some even have waitstaff who walk around with these hot treats and hand them out fresh from the oven. The popover is very similar to a Yorkshire pudding preparation: it is all about the temperature of your ingredients, the heat of your pan, the temperature of your oven, With all three of these elements working together, you can have these tasty treats in no time!
You will need:
2 eggs, room temperature
1 cup all purpose flour
1 cup milk, room temperature
1/2 tsp salt
1/2 tsp ground nutmeg
Let us begin:
Preheat your oven to 450' with a popover pan inside (or 6 6oz custard cups or 6 pop over pots).
In a large bowl beat eggs quickly, just to break them up.
Add in remaining ingredients and whisk just until smooth, do not over mix.
Carefully remove hot pan from oven and spray lovingly with cooking spray (I like the type containing flour for this).
Fill popover wells half way and return to oven.
Bake for 15 minutes and then decrease heat to 350'.
Bake for 20 minutes and remove from oven.
Carefully remove from pan and serve immediately, cheers!
