TABLE FOR TWO: Polish Stir-Fried Pierogies

Pierogies are a traditional Polish stuffed pasta. Traditionally filled with potato and cheese, pierogies can make a quick and amazing meal in under 30 minutes. Made in one pan, stir fried pierogies are a great weeknight dinner.

Full time 30 minutes
Serves 2

You will need:

1 pound or package pierogies
1 stick butter
1 large onion sliced
1 large pepper sliced, I use cubanelle peppers
2 tbsp olive oil
1 tbsp salt
1/2 tbsp ground black pepper

Let us begin:

In a large saute pan heat olive oil over medium-high heat.

Once oil is heated add peppers and onions into the pan. Season with 1 tsp salt and 1 tsp pepper.

Saute vegetables for 5-8 minutes or until tender.

Move vegetable to a serving platter for a moment.

Add butter into the pan and allow it to melt completely.

Once butter is melted add pierogies into the pan and lower heat to medium-low. Season with 1 tsp salt and remaining pepper.

Cook 5-10 minutes (will depend if using fresh or frozen) or until the begin to feel warm when you touch the center of one. Stirring occasionally to prevent sticking.

Once center feels warm to the touch, return vegetable to the pan.

Cover and cook 5-10 minutes (depends on if using fresh or frozen) or until the pierogies turn a nice golden brown. Stirring occasionally to prevent sticking.

Move to serving platter and cheers!
