Lemon Thyme infused Rice
A perfect accompaniment to fish or spicy dishes. This great weeknight side dish combines rice with the gently flavor of thyme and a subtle hint of lemon.
Full time 15 minutes (rice cooking time not included)
You will need:
1 lemon (or 1 tbsp lemon juice)
2 cups cooked white or brown rice, drained of any excess water
1 tbsp butter
1/2 tbsp olive oil
1 1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp ground black pepper
Let us begin:
In a saute pan heat butter over medium high heat until melted.
Add in olive oil and rice, stirring around to coat rice in melted butter and oil.
Allow to cook 2-3 minutes, stirring constantly to prevent sticking.
Squeeze lemon over rice and stir to incorporate.
Cook 2-3 minutes, stirring constantly to prevent sticking.
Add in salt, pepper, and thyme. Stir well to incorporate.
Cook 1-2 minutes or until rice appears to have absorbed all liquid from pan.
Carefully move to serving bowl and cheers!
