This simply delightful cheesecake will melt in your mouth and bring a smile to taste buds. A happy accident of mine once when I started making a cheesecake only to realize after mixing the filling I had no graham crackers. Not wanting to make a crust-less cake, I reached for the next best thing homemade cake mix. Using homemade or store bought cake mix to make a cheesecake really enhanced the final flavor!
Full time 2 Hours (include 30 minute cool time)
Makes 10" cake
You will need:
3 packages cream cheese softened
1 stick butter, softened
1 batch or box chocolate cake mix
2 cup chocolate chips
1/2 cup packed brown sugar
3 tbsp flour
1/2 tsp vanilla
Let us begin:
Preheat oven to 325' and lightly spray a 10" spring form pan with cooking spray.
In a medium mixing bowl combine cake mix and butter. Mix until a nice crumble form.
Measure out 1 cup of mixture and put it aside for now.
Pour remaining mixture into your prepared spring form pan and press down to create a crust. Make sure you go up along the edges by 1/4-1/2".
Pour reserves crumble mixture back into your mixing bowl. Add in brown sugar and 1 cup chocolate chips.
Mix to create a nice streusel topping. Set aside for now.
In a large bowl combine all remaining ingredients, except chocolate chips, stirring until well blended and smooth.
Add in remaining chocolate chips and fold in or stir gently.
Pour filling mixture into spring form pan, creating a nice even layer over your crust base.
Spread streusel topping evenly across the surface of the filling.
Bake in oven 1 hour to 1 1/2 hours, checking for a nice set center at 1 hour mark and every 10 minutes after until done to prevent over baking.
Remove from oven and let cool 30 minutes on a wire rack before popping spring pan or serving. If possible let cool longer.
Pop spring form and move cake to a serving dish.
