Bacon Cheddar Breakfast Bread

The crispy crunch of bacon, the warm melted cheddar, and the sweet corn bread make this a great breakfast dish. Bake this one ahead of time, for a quick morning meal, a great camping dish, or a great gift.

Serves 4-6
Full time 45 minutes

You will need:

2 eggs
1 pound turkey bacon
1 1/2 cup flour
1 1/4 cup milk
3/4 cup shredded cheddar
2/3 cup sugar
1/2 cup corn meal
1/3 cup vegetable oil
2 tbsp plus 2 tsp melted butter
1 tbsp dried chives
1 tbsp baking powder
1/2 tsp salt

Let us begin:

Preheat oven to 400'.

Lets start by preparing the bacon. Unwrap and slice the bacon into 1/2" wide pieces.

Pat dry with a paper towel and then add to a frying pan.

Fry over medium-high heat until it begins to crisp, stirring occasionally to prevent sticking to pan. Add in a tiny bit of olive oil if needed.

Once crispy, drain out as much of the excess oil as you can and then lay the bacon out on a few sheets of paper towels.

Cover over with additional paper towel and press down to dry off excess oil.

Pull out any pieces that seam over cooked or burnt.

Gather remaining bacon into a pile.

Recover with paper towel and smack it a few times with your fist.

This will create a variety of size and help create texture. Set aside for a moment.

In a large bowl, combine all remaining dry ingredients except cheddar cheese and chives.

Add in the liquid ingredients. Stirring until smooth.

Add in the cheddar cheese, chives, and crumbled bacon. Folding until a nice dough forms.

Set this aside for a moment.

Place a 8" cast iron dish into your preheat oven and allow to heat for 5 minutes.

Carefully remove from oven and spray lovingly with cooking spray.

Place dough into the hot greased pan.

Bake in oven for 15-20 minutes or until edges turn golden and center tests done when a tooth pick is inserted.

Let rest in pan for 3-5 minutes and then carefully flip out onto a serving dish.

Serve or allow to finish cooling to store for another date, cheers!
