CHRISTMAS COOKIES: Pumpkin Sugar Cookies

Here is a great twist on a classic cookie, I actually modified a friend's mother's recipe for this one. My secret is home roasting a sugar pumpkin, if you do not have time for this, you can used canned pumpkin. 

Full time: 1 hour
Makes 36 cookies approximately 

You will need:

1 stick butter, softened 
1 egg
2 1/2 cup flour
1 1/2 cup sugar
1 cup packed roasted puréed pumpkin
1 1/2 tsp allspice
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp salt

For topping
2 tbsp sugar

Let us begin:

Preheat oven to 350'.

In a large bowl cream together sugar and butter until fluffy.

Add in egg.

Add in all remaining ingredients.

On a small plate place 2 tbsp sugar.

Scoop out roughly 1 tsp size pieces and roll into a ball.

Place ball onto plate with sugar and roll to fully coat.

Place on baking sheet.

Bake cookies in oven for 8-10 minutes or until nicely golden.

Allow to cool on baking sheet for 5-8 minutes. Move to cutting board or wire rack to finish cooling.
