CHRISTMAS COOKIES : Andes Candies Sugar Cookies

Here is a great Christmas cookie which bakes up quick and easy. This is a newer cookie to my holiday line up, one which I created only recently. The best part, you start with cake mix!

Full time: 1 hour (includes multi batch baking/cooling)
Makes 36 cookies approximately 

You will need:

1 box white cake mix
2 eggs
1 cup chopped Andes candies
1/2 cup vegetable oil
1/2 tsp peppermint extract
6 drops green food coloring

Let us begin:

Preheat oven to 350'.

In a large bowl combine cake mix, oil, and egg.

Add in food coloring, you do not want it to mix in all the way, let a tiny bit of white still show.

Add in Andes pieces.

Scoop out 1 tsp size pieces and roll into a ball.

Place on an ungreased baking sheet 2" apart.

Bake full tray, 8-10 minutes or until edge begins to golden.

Remove from oven and let cool on tray 5-8 minutes, move to cutting board or cooling rack to finish cooling.
