Baked Butter Crusted Cod


Cod is the perfect easy dinner time fish. It has a light and flaky texture which is mildly flavored. When topped with a buttery cracker crust it turns into a magical meal.

Full time 30 minutes
Serves 3-4

You will need:

1 1/2-2 lb. Cod fish fillet
1 cup crushed butter crackers (I use Ritz)
1/4 cup lemon juice
1/4 cup butter, divided & melted
1 1/2 tbsp white wine
1 tsp onion powder
1 tsp salt
1/2 tsp garlic powder
1/2 tsp ground black pepper 

Let us begin:

Preheat oven to 400'.

Use 2 tbsp of the melted butter to fully coat both sides of the fillet and place into an edged baking sheet.

In a bowl combine remaining butter with remaining ingredients until well blended.

Bake cod for 8-10 minutes in oven.

Carefully remove from oven and coat evenly with the cracker mixture.


Return to oven for 10-12 minutes or until cooked through.

Remove from oven and let rest 2-3 minutes before serving.
