Grilled Mediterranean Sweet Potatoes


Looking for a quick and easy sweet potato recipe? Here is the perfect summer recipe. Full of flavor and easy to prepare!

Full time: 2 1/2 hours (includes optional 2 hour marinading time)
Serves: 4-6

You will need:

5-7 small sweet potatoes (I love Trader joes 16oz. Sweet potato bag for this recipe)
1/4 cup olive oil
1/4 cup vegetable oil
1/4 cup fresh rosemary
2 tbsp corse sea salt

Let us begin:

Wash and dry your potatoes.

Cut of the very end of each side and cut in half length wise.

Place in a large mixing bowl and top with all remaining ingredients.


Finger toss to full cover.

Optional for robust flavor: Cover with plastic wrap and let sit for 2 hours in refrigerator.

Preheat grill to medium-medium low. Spray a vegetable rack with non-stick spray.

Line potatoes onto vegetable rack and place on grill. Retain bowl for later.


Grill 5-8 minutes and then rearrange potatoes to ensure even cooking. You may get a tiny bit of surface charring, but that is okay.

Repeat above process two more times.

Grill additional 5-8 minutes or until you can pierce with a fork easily.

When potatoes are ready to come off grill, add lemon juice to the bowl you saved from earlier.

Remove potatoes from grill and place in bowl.

Toss to coat.

Place on a serving platter and enjoy!
