Mexico inspired Cilantro Lime Wedges

We are a very potato loving household, mashed, roasted, and wedged are the fan favorites. This is a great recipe to incorporate potatoes into a Mexican inspired meal, the nice citrus tang balances perfectly with the cilantro. Creating a ginger licking, cannot stop eating sensation!

Full time 45-60 minutes
Serves 4-6

You will need:

4-5 medium to large white potatoes, wedged into 8 pieces each. (Not sure how to do this? See my how to make homemade English chips)
1/4 cup olive oil
1/4 cup fresh cilantro, finely chopped
2 tbsp lime juice
1/2 tbsp garlic powder
1/2 tbsp onion powder
1 tsp salt
1 tsp ground black pepper
1/4 tsp chili powder ( leave out if desired)

Olive oil cooking spray

Let us begin:

Preheat your oven to 350. Line a baking sheet with aluminum foil and set aside.

In a large bowl place all ingredients, except cilantro and cooking spray.

Toss to well coat potato wedges.

Line wedges, skin side down.

Roast in oven 30-40 minutes or until you can gently inserted fork.

Remove from oven and spray with cooking spray.

Sprinkle across chopped cilantro.

Serve alongside your favorite dishes and enjoy!
