Rocky Road Popcorn

Popcorn is a great family time snack, it is easy to eat with little mess and has a great taste. For your next family time or game night try making up a batch of Rocky road popcorn filled with chocolate covered pieces, marshmallows, and fun!

Full time: 1 hour
Serves 6-8

You will need:

8 cups popcorn, fresh popped/microwave either is good, just no salt
3 1/2 cups chocolate chips
3 cups miniature marshmallows
1 1/2 cups roasted salted peanuts
1 1/2 tbsp vegetable shortening

Let us begin:

Line 2-3 cookie sheets with aluminum foil.

Spread popcorn out in thin layers, single if possible, on the sheets.

In a deep bowl place 2 cups chocolate chips and the vegetable shortening.

Microwave in 30 second increments, stirring after each one until it mixes smooth.

Using spoon, drizzle chocolate over the popcorn.

Spread peanuts over popcorn.

Spread marshmallows over popcorn.

Spread remaining chocolate chips over popcorn.

Place in refrigerator to harden for 30-40 minutes. (Or on countertop but it will take longer)

Crumble up into serving bowl and enjoy!
