Cheesy Broccoli and Rice

Is there really any need to introduce this recipe? Who doesn't love anything covered in cheese? It makes everything taste better, makes kids more willing to eat, and just adds a little something extra to your meal. This classic blend of ingredients will be a sure fire hit on your dinning table!

Serves 4-6
Full time: 40 minutes

You will need:

1 package Minute Rice (10 minute cook time)
1 head broccoli, chopped (or small frozen bag)
1/2 pound cheddar cheese, diced
1 tsp salt
1/2 tsp ground black pepper

Let us begin:

Preheat oven 350.

Cook rice according to package instructions.

Blanch broccoli in boiling water for 5 minutes.

Drain and set aside.

Once rice is cooked you are ready to begin building the dish.

Layer broccoli on the bottom.



Tuck 1/3 of the cheese into the spaces between the broccoli pieces.



Spread rice across the top. Some of the higher pieces may poke through it is okay.



Top with remaining cheese.



Bake in oven for 20 minutes or until cheese is completely melted.



Remove from oven and serve. Enjoy!
