BAKE IT: Chocolate Chip Muffins


There is nothing better the a batch of fresh muffins in the morning. The kids and the "full grown" kid in my household love chocolate chip muffins, so I decided to make them one morning. Lets just say they were a huge hit and not a single one was left behind.




This will make 12 muffins
Full time: 40 minutes (cool time included)

You will need:

1 egg
2 cups flour
1 cup chocolate chips
1 cup milk
1/2 cup sugar
1/3 cup vegetable oil
2 tbsp coco baking powder
3 tsp baking powder
1 tsp vanilla
1/2 tsp salt


Let us begin:

Preheat your oven to 325 (or cupcake machine).

Line a 12 cup muffin pan with paper liners and set aside for a moment.

Mix together milk, vegetable oil, vanilla,  and egg.

Add in sugar, baking powder, and salt. Mix just to incorporate.

Add in flour to form a thick batter.

Fold in baking coco powder.

Fold in chocolate chips.

Evenly divide the batter into the muffin cups.

Bake in oven for 15-20 minutes (or 10 minutes in cupcake maker).


Remove muffins from pan and let cool for 10 minutes before serving.
