MAKE IT: Creme Fraiche

Creme Fraiche is a great accompaniment to a variety of dishes. More and more these days you will see creme fraiche being used in recipes and on television. It is very easy to make and is almost identical to making sour cream at home. Just plan ahead when making this to allow your self at least 1 1/2 days for it to set and chill.

This will make 2 cups Creme Fraiche
Prep time: 5 minutes
Full time: 2-3 days (chill time included)

You will need:

For the first time:
2 cups heavy cream
2 tbsp fat free buttermilk

Let us begin:

In a clean screw top container (I use the Zip lock twist n'loc medium size), pour the cream and let it sit for a moment

Add in the buttermilk

Give it a quick whisk and cover

Let stand on a counter in a cool spot for 12-24 hours

Move the container to the refrigerator and let it chill for at least 8-12 hours before using

Remove lid and give mixture a light stir, the top will have a stiff film over it, but once stirred this will dissolve itself. You will now have a thick and velvety creme fraiche

Store and use for up to 2 weeks!
