Italian Potatoes and Eggs

As I have said in the past mother's family is Italian, and most of my youth was brought up eating their style of cooking. My grandmother and mother used to make a dish called potatoes and eggs, it is very similar to a frittata but done completely on the stove top. It can been eaten for breakfast, lunch, or dinner. Many of my family members eat it on a hard roll but, I like eating it on its own.

This will serve a family of 4-6
Full time: 40 minutes

You will need:

8 eggs
5-6 medium potatoes
1/2 cup parmesan cheese
1 tsp salt
1/2 tsp ground black pepper

For cooking:

1-2 cups oil (don't worry it will get drainned out)

Let us begin:

Preheat oven to 350

You want to start by cleaning your potatoes and dicing them into roughly 1/2" cubes

Place the diced potatoes into a large high sided saute/frying pan

Pour in the oil and turn heat on to a medium high heat. Cook for 10-12 minutes or until potatoes begin to golden and are easily pierced with a fork

Once potatoes are cooked drain out as much oil as possible from the pan. Set back on stove top and let sit for a moment

While this sits, in a bowl beat the eggs and whisk in remaining ingredients

Pour the egg mixture into the pan with potatoes and reduce heat to medium

Cook for 5-8 minutes or until edges of egg begin to turn golden.

Now my mother does this thing where she slides the whole thing out onto a plate and flips it back in, upside down to cook the other side. If you are daring feel free to try this method. I just finish it off in the oven for 5-8 minutes.

Slide the finished dish onto a plate and serve while warm
