Mint Chocolate Chip Pie


Did you know that May 15th is National Chocolate Chip Day? In honor of the day I decided to create a new and tasty dessert. I took the ingredients of a chocolate chip cookie, the texture of a pie, and blended mint flavoring. The end result is a great pie with the flavor of a mint chocolate chip ice cream!



This make a 9" pie
Full time: 1 hour 15 minutes (cool time included)
You will need:

1 9" pie crust, store bought or homemade
2 eggs
2 cups chocolate chips (or 1 cup chocolate chip and 1 cup white chocolate chips)
1 cup sugar
1/2 cup flour
1/2 cup butter
1 tsp peppermint extract

Let us begin:

Preheat your oven to 350

Place your pie crust in a pie pan and set aside

In a medium bowl melt you butter

Whisk in sugar and flour
Whisk in eggs and peppermint

Fold in the chocolate chips

Transfer mixture into your pie shell

Bake in oven for 40 minutes or until golden on the top and firm in the center
Allow to cool slightly at room temperature prior to serving to allow pie to reach proper texture. Serve warm or cool and enjoy!
