Italian Zucchini Quiche

Italian Zucchini Quiche is slightly hard to describe. It isn't exactly a quiche but it isn't a casserole either. All I do know is: it is super yummy! My grandmother used to make this all the time when I was growing up. I always looked forward to it and easily dove into seconds. It makes a great side dish, main course, great for breakfast, and was always a hit when my grandmother brought it to picnics. To be honest, I am not sure if there is another dish in my repertoire that reminds me of my grandmother as much as this one does.

If your not a huge zucchini fan, you can easily substitute yellow squash, mushrooms, or a combination of all!

This will serve 6-8
Full time 1 1/2 hours
You will need:

4 eggs
3 medium or 2 large zucchinis, you will want to end up with 3 cups cubed
1 small onion, diced extremely fine *optional
1 cup Bisquick mix
1/2 cup vegetable oil
1/2 cup grated cheese
1/2 tbsp salt
1 tsp ground black pepper

Let us begin:

Preheat your oven to 325 degrees

Lightly coat a 9" square or round baking dish with cooking spray and set aside

In a large bowl mix all ingredients, except zucchini, whisk completely to breakup any clumps
Let us talk about the zucchini for a moment, you want nice even diced pieces to create an even cooking time. To do this, I use a basic prep method. Slice your zucchini into 1/4" thick slices, then stack 3-4 on top of each other.

Slice down through these pieces 3 times vertically and then 3 times horizontally, see photo below, to create a nice even pieces
Gently fold the zucchini into the bowl with binding ingredients. Stir slowly to make sure all pieces are completely coated. You will notice that it won't seem like enough, but if you stir it and coat evenly it will be
Gently move this mixture into your baking dish and smooth over the top to try and create an even top
Bake in oven 30-40 minutes, check with a toothpick to ensure fully cooked. If you poke the toothpick into the center and it comes out clean, your all set and ready to take out of the oven. If not put it bake in and check in 10 minutes.

Allow to sit on the stove top for 5-10 minutes before serving, to allow the excess steam to escape from the center before slicing. Enjoy!
