Cinnamon Chicken with Spice Apple Rings

In the Middle East spices and seasonings are used to create vibrant flavorful dishes. Often combining both savory herbs with sweet spices in a perfect blend of balance and flavor. I am actually not sure if cinnamon chicken originated in the Middle East but, its flavor combination is very similar to it.

I like to serve cinnamon chicken over white or jasmine rice for a great rounded flavor.

This will serve 2-4
Full time: 20-30 minutes
You will need:

1 to 1 1/2 lbs. chicken breast tenders, or chicken breast sliced
1 small onion sliced
1 cup orange juice
1/4 cup raisins
2 tbsp olive oil, divided
1 tbsp capers
1 tbsp minced garlic
1 tbsp cinnamon
1 tbsp ground cloves
1 tsp salt
1 tsp ground black pepper

Spiced apple rings 2 per person

Let us begin:

Get a saute pan preheated over medium high heat add in 1 tbsp olive oil once heated

In a small bowl combine salt, pepper, cinnamon, and cloves

Dip chicken strip into spice mixture, it doesn't need to be fully coated just mildly flavorful

Place into hot pan and brown, continue until all chicken has been coated

Allow chicken to brown off on one side 4-5 minutes
Add in the slice onions along with 1 tbsp olive oil
Allow onions to cook down until soft, 3-5 minutes

Carefully pour off excess oil

Add in capers and raisins
Rotate chicken to the top of the onions
Pour in orange juice, lower heat to simmer and cover
Cook for 10 minutes or chicken is cooked through

Plate over rice and ladle over pan drippings

Place cold spice apple rings over chicken just before serving, to help keep a great contrast in texture anf flavor.
