Turkey and Squash Curry

Turkey and Squash Curry is a great one pot dish. It blends a nice subtle spice with a nice flavorful combination.

This will serve 3-4
Full time: 30-40 minutes
You will need:

1 lb. turkey cutlets
1 large butternut squash, chunked (or 2 cups)
1 small onion, diced
1 cup warm water
2 tbsp curry powder
1 tbsp olive oil
1 tbsp minced garlic
1 tsp thyme
1 tsp ground cloves
1/4 tsp ground cumin
1/4 tsp ground black pepper
1/4 tsp salt

Let us begin:

Add all spices to the warm water and set aside to dissolve

In a large pot sauté garlic and onions in olive oil over medium heat. You'll want to give it 5-8 minutes to get them translucent or soft

While this cooks down slice your turkey cutlets into stripes approximately 1/2" wide

Then toss them into the pot to brown

Once it browns up nicely, toss in the squash and stir it up to mix well

Give it a few minutes to soften and then pour in water mixture, make sure to give the mixture a good stir to make sure the spices don't get left behind

Cover pot and cook for 15-20 minutes or until squash is easily forked, serve and enjoy!
