Cauliflower Au Gratin

Admittedly everything is better when covered in cheese. And cauliflower by far is one of the best things to cover in cheese. It's texture, firmness, and flavor lend itself perfectly to making an Au gratin.

Serves 4-6
Full time: 20 minutes
You will need:

1 cauliflower head
1/2 lb. white cheddar cheese
1 cup heavy cream
4 tbsp salt
2 tbsp butter
1 tbsp flour
1 tsp salt
1 tsp ground black pepper
1/2 tsp garlic powder
1/4 tsp onion powder

Let us begin:

In a large pot bring several cups of water to boil and add the 4 tbsp salt to it


Core and cut the the cauliflower head, make sure to get pieces roughly the same size


Once water is at full boil add in the cauliflower and set to medium


Cook at medium heat until bubbles begin to form around the edges of cauliflower pieces


Drain and return to pot

Reduce temperature to simmer and begin sauce


In a small sauce pan melt butter over medium high heat and whisk in flour


Slowly add cream, whisking fully to incorporate


Whisk in remaining spices and lower heat to simmer. Let sit for a moment

While this sits, cut cheddar into chunks


Return heat to medium and add cheese to pot


Whisk constantly while cheese melts down


Continue to whisk until smooth and lump free


Pour sauce over cauliflower


Using a spatulas gently fold together


Give it a few moments on simmer and then pour into bowl to serve.
