Thin Mint Cookie Cupcake

Girlscout cookies are a great country classic! Who hasn't eaten a few in their life? Here is a great way to get that cookie into a cupcake!

This will make 18-20 cupcakes
Full time: 50 minutes (includes cooling and frosting time)

You will need:

For Cupcake Batter:
2 eggs
1 1/2 cup sugar
1 1/3 cup flour
3/4 cup milk
3/4 cup coco powder (unsweetened)
3 tbsp butter, softened
2 tsp baking powder
1 tsp peppermint extract
1/4 tsp baking soda
1/8 tsp salt

For Frosting:
4 oz unsweetened baking chocolate
3 cups powdered sugar
1/2 cup butter,  softened
1/3 cup milk
2 tsp vanilla extract

For Garnish:
Thin Mint Cookies or Keebler Grasshopper Cookies

Let us begin:

Preheat oven to 350 and get your cupcake pan ready (either liners or cooking spray) then set aside

Starting with cupcake batter: in a large bowl combine butter and sugar until fluffy

Add in 1 egg at a time, mixing well to combine

Add in all remaining ingredients and mix well to combine

Fill cupcake pan 1/2 full

Bake in oven for 12-17 minutes. Use a toothpick to test for proper setting

While these bake lets make the frosting

Combine sugar, butter, milk, and vanilla. Whisk or blend until smooth

Melt chocolate in double boiler or microwave, allow to cool slightly, and fold in

Move frosting into a pastry bag or large zip bag, set aside until cupcakes are ready

For garnish: using a sharp knife cut cookies in half, don't worry if some break just keep them and any crumbs that get left behind (you need half a cookie per cupcake)

Carefully move cookie crumbs and broken cookies into a zip-bag with a few extra cookies

Using a rolling pin or bottom of a glass, smash down cookies into large crumbs. Set aside

Once cupcakes are ready, assembly is quick

Use your frosting to create a small swirling dollop on the top of each cupcake

Stick in a cookie wedge, cut side down slightly off center

Dust cookie crumbs over top

Repeat on all cupcakes! And your ready to go.
