Lemon Pepper Orzo Chicken Salad

As we approach spring and summer, we begin to think of eating lighter meals. Often we want a well balanced dish which can be eaten on the go. Orzo salad is the perfect fix.

Containing a great combination of flavors along with a with a healthy balance of foods, orzo salad is great in the go. Adding in things like chicken, shrimp, or tofu for protein complete and round out the salad. The best part is the dressing, you can change up the flavor of the salad just by changing your dressing. Just remember not to use too much or it will get super soggy and loose flavor.

This serves 8-10
Full time: 20 minutes
You will need:

1 1/2 lb. boneless skinless chicken thighs
1/2 box orzo, cooked and cooled
4 Campari tomatoes, diced into 8 pieces
1 cucumber, diced into 1/2" pieces
1 red bell pepper, diced into 1/2" pieces
1/4 cup, plus 1 tbsp olive oil
3 tbsp lemon pepper seasoning
2 tbsp lemon juice
1 tbsp salt
1/2 tbsp ground black pepper
1 tsp garlic powder

Let us begin:

In a sauté pan, over medium heat-heat 1 tbsp olive oil

While this heats season chicken with lemon pepper seasoning on both sides, if you don't use all the seasoning it is okay

Brown chicken in heated pan for 5-8 minutes per side, to get a nice golden brown color.


Once brown, lower temperature to low and cook until chicken is at proper eating temp. Remove from pan and let cool

Once cool dice into 1/2" pieces and set aside

In a large bowl mix olive oil, lemon juice, salt, pepper, garlic, and any remaining lemon pepper seasoning


Add in the vegetables and stir well to coat evenly


Add in the orzo and stir well to coat evenly


Give a little taste and check to see if additional seasoning is needed

Add in chicken and stir to incorporate


Serve or store in refrigerator for up to 3 days.
