Gazpacho

Gazpacho is a perfect soup for the New Years resolution to eat better, healthier, and homemade. Gazpacho is a cold tomato based soup, it has a subtle and filling heat to it. I actually enjoy eating this in the cold winter months along side a nice hot sandwich. Having the subtle heat to it warms you from the inside out and makes you feel full without over eating! It travels easily and stores well for roughly a week.

Add or subtract hot peppers such as jalapeno, habanero, or cubanelle based on your desired heat level. Just remember to seed and chop them finely.

Serves 4
Full time: 40 minutes
You will need:

28oz diced canned tomatoes
1 small pepper, diced into 1/4" pieces
1/2 cucumber, diced into 1/4" pieces
1/2 onion, diced into 1/4" pieces
1/2 cup water
2 tbsp red wine vinegar
2 tbsp olive oil
1 tbsp fresh chopped cilantro
1 tbsp fresh chopped basil
1 tbsp minced garlic
1 tsp salt
1 tsp ground black pepper

*finely diced hot pepper of your choice, optional. I recommend 1-2 tbsp max before this becomes more of a pepper soup
Let us begin:

In a blender place water, oil, and 1/4 of the tomatoes. Blend until tomatoes have become a thick liquid

Pour tomato liquid mixture into a glass bowl. Add in remaining tomatoes and stir


Mix in all other remaining ingredients, stir until well blended


Cover with plastic wrap and chill in refrigerator until ready to serve (minimum 30 minutes)
