Peanut Butter Cup Cookies

Classic candy favorites can always be a crowd pleaser. Try this great easy to make cookie for gatherings, holiday cookie swaps, and homemade gifts.

Peanut butter cup cookies are a great way to use up extra Halloween candy. You can actually use any candy bar to do this, "snickers" and "twix" work wonderful in this recipe.

This will make 2-3 dozen cookies
Full time: 40 minutes (includes cool time)
You will need:

8 peanut butter cups (or 1 1/2 cup chunked candy of your choice)
1 egg
1 1/3 cup flour
3/4 cup granulated sugar
1/2 cup butter, softened
1/2 cup brown sugar, packed
1 tsp baking powder
1 tsp vanilla
1/2 tsp baking soda


Let us begin:

Preheat oven to 375

Carefully cut the peanut butter cups into eight pieces, candy chunks and set aside


In a large bowl combine butter, egg, and vanilla until smooth


Cream in sugars, baking soda, and powder

Mix in the flour. Do this by hand for an easier time


Add in candy chunks, mix only light enough to incorporate chunks


Roll into balls roughly 1 1/2" around (walnut)


Set on greased cookie sheet in rows 2" apart


Bake for 12-15 minutes edges should begin to appear golden brown


Cool on tray for 5 minutes then remove to wire rack to finish cooling


When done cooling store in airtight container away from heat
