MAKE IT: Cranberry Jelly: Whole Berries, Smooth Jelly, Spiced Jelly


Cranberry jelly is a staple at most holiday meals. Served many different way, each is as yummy as the last! Even the most complex jelly flavor is easy to produce. Below are the three most popular ways to enjoy your fresh cranberries

CRANBERRY JELLY(Smooth)  OR SAUCE (whole berries)
Full time: 30-60 minutes (based on whole or smooth)
You will need:

1 lb cranberries, make sure no berries are brown or shriveled
1 lb sugar
1 1/2 cups cold water

Let us begin:

Place berries in cold water in a sauce pan, bring to bowl over medium heat


They will begin to pop; this is okay, they are supposed to: it is the water inside bursting out


FOR CRANBERRY SAUCE WITH WHOLE BERRIES: stir in sugar, bring back to boil, keep at boil for 10 minutes and remove from heat.


FOR CRANBERRY JELLY OR SMOOTH:
Once berries are tender and slushy remove from heat


Now,  press through a sieve. This will produce a smooth pulp.


Return to saucepan and stir in sugar, bring back to boil.

Return to simmer for 10 minutes. Begin to check for setting. To do this spoon out a small amount and put in fridge until cold.  If it is ready it will form a skin, like gravy that has set it should wrinkle if you poke it.


If it is still runny or fluid continue to boil. And re-test every five minutes!

SPICED CRANBERRY JAM

You will need:

1 lb cranberries, make sure no berries are brown or shriveled
1 lb sugar
1 1/2 cups cold water
1 tbsp orange peel
1 tsp ground cloves
1 tsp ground allspice
1 tsp ground nutmeg
1 orange peeled, seeded, and diced into small pieces


Let us begin:

Place berries in cold water in a sauce pan, bring to bowl over medium heat

Turn down the heat and let simmer until the berries become tender, they may begin to pop. it is okay, they are supposed to do so, that is the water inside bursting out.

Add in remaining ingredients and simmer an additional 5 minutes.

 Stir in sugar, bring back to boil, keep at boil for 5 minutes and remove from heat.


For all

*If you are eating today, let cool before serving.
*If you are storing it, let sit 10 minutes and transfer to you sterilized jam jars.


STERILIZING JAM JARS:

Always wash jams jars in hot soapy water. Drain and air dry upside down, do not towel dry.

Carefully place jam jars upside down in a oven

Heat at 300 degrees for 15 minutes

Carefully remove jam jars and place on a clean, dry towel upside down until needed.

Do not touch rims when filling or moving
